"The 'hen' would have been a young cockerel.  Miles was probably showing/explaining how they were turned into 'capons'.  This involved sticking a large bore needle into the back of the neck and inserting a tablet, almost the size of an aspirin if I remember correctly, under the skin. Basically it gave them a large dose of female hormones to keep them docile instead of fighting and to put on weight." - A Former Inmate
